These mini cakes are quick and really delicious. My kids were eating the dough from the bowl, suing their hands – one of their favorite dough as not as tense as the one made from nuts only. This dough is also suitable for you Christmas “cooking”
Here is the recipe:
Dough:
1 cup of shredded coconut
1 cup of golden flaxseeds
3-4 tablespoons raw honey or coconut nectar for vegans
1 pinch of cinnamon
4 tablespoons of filtered or distilled water
Filling:
1/2 cup blueberries
1/2 banana
Directions:
Put coconut in your high speed blender and grind until fine. Put in a medium bowl.
Then put flaxseeds in a blender and grind until smooth. Mix with coconut flour, add a liquid sweetener of your choice and water. Mix with your hands until the dough is moister and smooth, taste and add sweetener if not sweet enough.
Mash blueberries with banana in a small bowl, using a fork.
Make small balls from your dough in your hands and push a small hole in the middle using your thumb. Fill with fruit.
